Cheese cake for all audiences recipe
“With this original cheesecake recipe, adaptations can be made for all audiences, adhering to the needs of each one (patients with diabetes, people who are on a diet, patients with celiac disease and patients with lactose intolerance )”, he explains a CuídatePlus Inmaculada Luengo, an expert nutritionist in gastronomy at the European Medical Institute for Obesity (IMEO).
We preheat the oven to 180ºC with heat up and down and line the inside of the mold with two baking papers of Cheese cake for all audiences.
We beat the cheese little by little so that it becomes more creamy, we add the cream and, once everything is mixed, the sugar.
We are adding the eggs one by one, integrating them well into the dough. Finally, we add the tablespoon of flour and mix it. Bake for 45-50 minutes and let cool.
For diabetics and people who are dieting it can be adapted by substituting sugar for sweetener or date cream. Reduce the amount of cream to half and choose a light type of cream cheese. You can even reduce the amount of cheese by adding a couple of Greek yogurts to the mix.
With regard to celiacs, if they follow the traditional cheesecake recipe, they have to substitute flour for cornstarch to achieve the same effect and avoid gluten. In case you want to add the base with the hydrate, you could make a dough with gluten-free oats, dates, and nuts.
For those intolerant to lactose, you can substitute lactose products for fresh cheese and lactose-free yogurts to achieve the same result.
